Potato soup

Today was snowy and cold, so it was a perfect day to make soup in the crockpot. Here's the recipe I made:
  • 3 potatoes, peeled and chopped
  • 1 small sweet onion, diced
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1 teaspoon dried rosemary or thyme, or a combination of both
  • 2 chicken or vegetable bouillon cubes
  • 2 1/2 cups water
  • 1/2 tablespoon salt
  • 1/4 cup butter
  • 1 tablespoon chopped fresh parsley
  • 12 oz. can evaporated milk
1. First of all, don't worry about making exact measurements. It's flexible.
2. Place all ingredients except parsley and milk in a slow cooker. Cook on low for 7-8 hours or on high for 3-4 hours.
3. Add parsley and milk and cook on high for an additional half hour. Makes 4-6 servings.
